Sony's Shortcut: Make Vegetable Stock from Veggies Scraps

Hey y’all, welcome to this week’s Tuesday’s Tip! 

If you're anything like me, you love making the most of your ingredients—and that includes repurposing veggie scraps! Instead of throwing away those carrot ends, onion peels, or celery stalks, try saving them to make homemade vegetable stock. It’s an easy way to create rich, flavorful stock without any waste, and it’s a great shortcut to keep in the freezer for whenever you need it!

Here’s How to Make Homemade Vegetable Stock:

  1. Save Your Veggie Scraps
    Keep the leftover parts of carrots, celery, onions, garlic, scallions...any hardy vegetable that is on its last leg! You can store them in a freezer bag as you go, or collect them in a container until you have enough.
  2. Add Herbs, Water & Boil
    Herbs add the “umami” to the soup, in my opinion. I go with fresh thyme, parsley, rosemary and a bay leaf for good measure. Once you have your veggie scraps collected, add them to a pot and cover them with water. Season with salt and pepper. Boil for about 10 minutes then simmer for about an hour to bring out the flavors.
  3. Strain 
    Once the stock has simmered and is nice and flavorful, strain out the veggie scraps.
  4. Freeze & Use!
    Store your homemade veggie stock in the freezer for up to 6 months. Whenever you need a quick broth for a recipe, just grab a cube (or a bag) and you’re good to go! You can store the liquid in several ways:
      • Ice trays: Pour the stock into ice trays for easy portioning.
      • Mason jars: Store larger portions in mason jars for soups and stews.
      • Freezer bags: For even more space-saving, pour the stock into freezer bags and lay them flat in the freezer.
